It is going to be almost more than 3 months since I’m in quarantine and it means since than we’ve not received any take-away. Hence I try to bake everything I miss at home and I would admit that dinners are becoming soo delicious.
Pide is one of on the top list that I crave very often. So, I decided to bake one homemade and it became a weekend tradition that we’re looking forward for weekends.
Ingredients – for dough
3 cups all purposes flour
1 tbsp sugar
1 tbsp yeast
1 cup warm milk
1 tbsp salt
3o gr. butter, soft – some for brushing
Water- if required for dough
Ingredients – for filling
This is depending how you wish your pide.
I baked one with diced lamb meat and the one with cheese.
200 gr diced lamb meat
1 tbsp olive oil
2 cloves garlic
2 chopped tomate
Spices: hot chilli, oregano, black pepper, salt
I made cheese mixture with 1 mozzarella ball, 100 gr. feta and 1 cup cheddar. I added black pepper, hot chilli and oregano on cheese mixture.
First thing is adding yeast and sugar into the warm milk and get the yeast activated for 15 minutes. Making the dough with milk is making the dough more softer.
Meanwhile I prepare the cheese mixture.
When the yeast is activated I start preparing the dough.
Put the flour with salt and make a hole on the middle, add milk, yeast, butter slowly and make the dough. If you like you can also make the dough with olive oil instead of butter but I do like as much as buttery taste in pide.
Knead well for 15-20 minutes and add warm water if required and tap it and leave to rest for one hour.
Meanwhile I can prepare the meat filling.
Chop the onion in small pieces and fry it until to get brown and add garlic, tomatoes, spices and fry 2-3 minutes on middle heat and add the lamb meat. Cook for 10-15 minutes on medium heat and leave it aside.
When the dough is ready, almost on double size, get small balls from dough and roll it on floured surface on oval shape. Put the filling on it by leaving 2-3 cm on the edge and fold from the edges as keeping the filling inside and by keeping the oval shape.
Repeat the action for all dough with all ingredients and bake for 20-25 minutes until it gets red on pre-heated oven on 180ºC.
