I love important days, because it means, I can cook or bake something out of my routine life.
As I bake since a long time, baking a cake makes me to feel the easiest but the yummiest thing can go out from my kitchen. I do love home made food as I can control how much sugar, what kind of butter I can put into and in terms of my healthy alimentation habit I can create the best one.
So, this time I baked a cake that naturally come out of me.
Prep. 10 min, baking 40 min.
- 2 eggs,
- ¾ cup sugar,
- ¼ cup olive oil
- 4 tbsp. greek yoghurt (or one cup milk),
- 1 tsp. cinnamon,
- 1 tsp. nutmeg
- 1 tsp. lemon zest,
- ¾ cup chopped walnut (I prefer to chop on big pieces)
- ½ tsp. vanillin extract
- 10 pieces chocolate bars
- 1 tsp. baking powder
- 8-10 tbsp. flour
Whisk the eggs well and add sugar and whisk more. Add olive oil, greek yoghurt, cinnamon, nutmeg, lemon zest, walnut and vanillin extract.
Mix them very well and add the flour slowly and then put the baking powder into flour and mix them together.
I prefer to have a tough cake dough, so I can feel very intensive taste.
When the mixture is ready pour the half of the mixture, put the chocolate bars and add the rest of the mixture.
Bake it 35-40 min on 180oC.
