When I travel I don’t like only eating new and different food but also I really like to learn how to cook or bake something special from that city. So, on my trip to Antakya I learnt really very tasty and simple cookies that it is possible to keep them for a long time. Actually it is told that when you keep it in an appropriate box, it is possible to keep until two months. Also cookies were used to be baked on festivals, like Christmas cookies, and it has very special place on the childhood of the many people. I am sure that smelling these spices would make many people to travel in the time towards the past. So I just couldn’t eat them and not to share this yummiest part of great Antakya cuisine.

The main ingredient of this tradational cookie is a kind of mixture of 7 spices that it was possible to buy this mixture on Antakya. So, I will write the main ingredients of this mixture that once you prepare it, you can use it for many times on future.

Mixture of spices:

  • ½ tsp cinnamon
  • ½ tsp pimenta racemosa
  • ½ tsp nutmeg
  • ½ tsp clove powder
  • ½ tsp ginger powder
  • ½ tsp prunus mahaleb
  • ½ tsp mastic powder or smashed mastic

For the filling:

The most popular type of this cookie is with the date palm one. You may use fig, another fruit or just walnut but trust me, you just try with the date palm. You gonna love it!

Take of the seeds of the date palms and let them sit in water and make them to get softer. Meanwhile you can go on preparing the dough.

When the date palms are softer, put them food processor or use blender to make them pure. Put ½ tsp cinnamon and one cup walnut. I use my hand to make walnuts on small pieces by one by. Because when they are not like pure, when you bite the cookie, you can feel the taste of walnut on your mouth. So, keep the walnuts neither very small nor very big.

Kömbe dough ingreidents

  • 25-30 pcs. cookies, repare 20 min., baking 25 min.
  • 300 gr butter
  • 1 cup milk
  • 1 tsp. baking powder
  • 1 tsp. spices mixture
  • 1 tsp. vanillin powder
  • 1 tsp. coconut
  • 1 cup powdered sugar
  • 5-6 cup flour
  • ½ cup sesame seed (for the top of cookies)


Melt the butter. I usually take it out of the refrigerator and let it melt naturally. When the butter is soften or melted mix it with powdered sugar and knead it, then add milk and all spices and mix them. Finally add the flour and be sure that the dough will be soften but not sticky.

When the dough is ready take small pieces of dough, fill it with the filling and shape it. In Antakya they have special wooden cookie molds. But if you do not have something similar you can shape it how you want. Before replace them to mold,  dip them into sesame and put it to molds. The result was great. Baked them on 200oC oven, around 25 min. until to get them red.

Tip: If you make small balls and put sufficient filling the taste is better. It means, less dough, more filling.
